Daily Responsibilities Include:

  • Responsible for supervising and managing staff in the F&B FOH department. Develops implements and manages operational goals and monitors achievements of performance and profit objectives.
  • Assists in hiring and training, and responsible for motivating, evaluating, and supervising staff on assigned shift to ensure employees receive adequate guidance and resources to accomplish established objectives.
  • Create effective and efficient schedules, while maintaining labor costs, meeting staffing objectives and achieving guest satisfaction.
  • Developing people to provide exceptional service, products and value to the company guests while maximizing profitability
  • Responsible for assisting in the budget process for the department and provide recommendations; ensuring compliance to departmental budget initiatives; reporting budget concerns to director.
  • Enthusiastically supports, actively promotes, and demonstrates superior customer service in accordance with department and company standards and programs. Ensures customer service standards are followed by all team members and addresses issues as they arise. 
  • Responsible for the overall achievement of department customer service goals.
  • Thinking strategically and operationally about factors such as: pricing, quality, marketing, price/value perceptions, customer satisfaction, employee training and development as they relate to overall Food & Beverage products
  • Assisting to develop financial, business and capital expenditure plans that are consistent with the overall strategic positioning of the property
  • Responding to changes in planning assumptions and alter plans as necessary Presenting updates, formally, to plans and provide appropriate explanations and solutions to variances
  • Ensuring that the receiving, holding and issuance, production and service of products are within the quality and control standards
  • Responsible for ensuring the compliance with all regulatory compliance within area of responsibility and reporting potential issues to Executive Management / GM.
  • Ties operational challenges to strategic direction and the ability to be effective in a large organization 
  • Responsible for staff development and training programs.
  • Evaluates team members within department and delivers constructive feedback to employees in regards to performance
  • Assists in designing and engineering menus
  • Implementing and auditing inventory and cost control systems and procedures
  • Enforcing all regulatory, internal controls, policies and procedures for compliance
  • Professional appearance and demeanor
  • Maintains strict confidentiality in all departmental and company matters.

To be successful in this position it will require the following skill set:

  • Must be at least 21 years of age.
  • Bachelor’s Degree (B.A./B.S.) or equivalent from four year college or university preferred; OR four years related supervisory or managerial experience and/or training; OR equivalent combination of education and experience. 
  • 3-5 years progressive Food & Beverage management experience
  • Must have the ability to interact with guests, staff and colleagues and resolve problems and conflicts in a diplomatic and tactful manner.
  • Must be proficient in Microsoft applications (Excel, Access, Word)
  • Knowledge of all phases of Food & Beverage administration, cost control and familiarity of all food and beverage services is required
  • Ability to train and motivate personnel
  • Ability to write reports, business correspondence, and procedure manuals.
  • Ability to communicate well among staff and be guest service oriented
  • Organizational development and personnel assessment skills
  • Knowledge of food cost and labor analysis
  • Flexible to work all shifts including holidays, nights, weekends, and overtime as business needs dictate.
  • Employee must be able to qualify for licenses and permits required by federal, state and local regulations.
  • Must successfully complete TIPS training.
  • Must possess a valid driver’s license and have acceptable driving history as determined by Penn National Gaming’s auto insurance carrier.
  • Employee must be able to qualify for licenses and permits required by federal, state and local regulations.
  • Physically mobile with reasonable accommodations including ability to push, pull, carry and lift up to 50 lbs., and the ability to push, pull, reach, bend, twist, stoop, stack, crouch, kneel and balance when performing job duties in varying work areas such as confined spaces
  • Employee could be exposed to an environment containing unrestricted second hand tobacco smoke.
