ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Responsible for directing all Food & Beverage and casino beverage operations.
  • Develop team member to provide exceptional service, products and value to our guests while maximizing profitability.
  • Think strategically and operationally about factors such as: pricing, quality, marketing, price/value perceptions, customer satisfaction, employee training and development as they relate to overall Food & Beverage products.
  • Develop financial, business and capital expenditure plans that are consistent with the overall strategic positioning of the property.
  • Respond to changes in planning assumptions and alter plans as necessary.
  • Formally present updates to plans and provide appropriate explanations and solutions to variances.
  • Provide leadership and demonstrate behavior that is consistent with the Code of Conduct.
  • Ensure that the receiving, holding and issuance of products are within the quality and control standards.
  • Tie operational challenges to strategic direction and the ability to be effective in a large organization.
  • Assist in designing and engineering menus.
  • Implement and audit inventory and cost control systems and procedures.
  • Direct and assist in establishing plans and organizational structure for their respective areas.
  • Analyze market trends and adjust business plans to promote financial health and growth.
  • Manage the work processes and procedures of departmental managers or supervisors. 
  • Develop or oversee and implement departmental training programs.
  • Review the performance, productivity and efficiency of managers or supervisors including but not limited to periodic evaluations and development of coaching techniques to motivate productivity.
  • Develop, implement and promote programs to reward and recognize performance of team members.
  • Recommend, approve or oppose the change in status of team members including but not limited to changes from full time to part time, promotions and transfers.
  • Protect and preserve the assets of the company.
  • Compile information, complete and submit reports as required.
  • Complete regular and periodic verification processes for the proper accounting of revenues, expenses and inventory.
  • Develop, enforce, review and approve changes or revisions to operating practices, procedures and standards based on business trends and practices. 
  • Administer disciplinary actions, propose corrective action, and monitor post-disciplinary performance of managers, supervisors or front line team members as needed.
  • Maintain strict confidentially of all files, communications and information in the conduct of company business.
  • Develop, participate in and promote customer service programs to continuously improve quality service.
  • Develop, attend or provide training as needed or required including but not limited to sanitation, safety and alcohol awareness.
  • Provide for the safety of team members including keeping areas clean and free of safety hazards, debris and litter and performing all job duties in a safe and responsible manner.

QUALIFICATION REQUIREMENTS  

To perform this job successfully, an individual must be able to perform each essential duty satisfactorily.   • Bachelor’s degree from an accredited four-year college or university; or equivalent combination of education and experience.
  • Previous supervisory experience in a full service or high-volume restaurant preferred.
  • Ability to earn and maintain ServSafe certification
  • Must be proficient in Microsoft applications
  • Ability to train and motivate personnel
  • Excellent motivational, communication and customer service skills required.
  • Organizational development and personnel assessment skills
  • Knowledge of food cost and labor analysis
  • Must have the ability to interact with guests, staff and colleagues and resolve problems and conflicts in a diplomatic and tactful manner.

LANGUAGE SKILLS

Ability to read and interpret documents In English, such as safety rules, operating and maintenance instructions and procedure manuals. Ability to read and communicate verbally in English. Written communication skills in in English may also be required.

 

MATHEMATICAL SKILLS

Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to perform these operations using units of American money and weight measurement, volume and distance. Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, area,

Possess ability to operate an adding machine and have basic computer skills.

 

REASONING ABILITY

Ability to apply commonsense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.

 

CERTIFICATES, LICENSES, REGISTRATIONS:

Employee must be able to qualify for licenses and permits required by federal, state and local regulations.
