WE LOVE OUR WORK.

  • Responsible for directing the overall operations and staff of the Food & Beverage department. Develops, implements, and manages operational goals and monitors achievements of performance and profit objectives.
  • Ensure that scheduling is done in an effective and efficient manner, while maintaining labor costs, meeting staffing objectives, and achieving guest satisfaction.
  • Responsible for preparing, monitoring, and adhering to budgets and ensuring compliance to departmental budget initiatives. Reports budget concerns/deviations to Executive Management/GM.
  • Enthusiastically supports, actively promotes, and demonstrates superior customer service in accordance with department and company standards and programs. Ensures customer service standards are followed by all team members and addresses issues as they arise. Responsible for the overall achievement of department's customer service goals. - Responsible for directing all Food & Beverage and Casino Beverage operations.
  • Manages departmental expenditures and resources.
  • Formally presents updates to plans and provides appropriate explanations and solutions to variances.
  • Ensures that the receiving, holding, and issuance of products are within the quality and control standards.
  • Ties operational challenges to strategic direction and the ability to be effective in a large organization.
  • Assists in designing and engineering menus for all Food & Beverage outlets.
  • Observes and monitors staff performance and plans work processes to ensure efficient operations and adherence to Food & Beverage policies and procedures. Implements and Audits inventory and cost control systems and procedures.
  • Ensures all safety and sanitation policies are followed in accordance with local, state, and federal guidelines.
  • Responsible for the overall engagement of all team members by addressing and managing team member feedback, suggestions, complaints, and grievances.
  • Responsible for ensuring regulatory compliance within area of authority and reporting potential issues to Executive Management/GM.
  • Maintains strict confidentiality in all departmental and company matters.

  • Bachelor’s degree (B.A./B.S.) from an accredited four-year college or university, plus ten (10) years of progressive Food & Beverage management experience required; or equivalent combination of education and experience.
  • Minimum three (3) years of experience directing a multi-unit Food & Beverage operation.
  • Knowledge of all phases of Food & Beverage and Casino Beverage administration, cost control, and familiarity with all Food & Beverage services required.
  • Must have excellent written and verbal communication skills.
  • Ability to maintain a high level of confidentiality and professionalism.
  • Must be proficient in all Microsoft Office applications and be knowledgeable in Food & Beverage software systems.
  • Ability to manage employees working in a high-pressure environment towards successful results for the property and company.
  • Must be able to think strategically and operationally about factors such as: pricing, quality, marketing, price/value perceptions, customer satisfaction, and employee training and development as they relate to overall Food & Beverage products.
  • Must be able to develop financial, business, and capital expenditure plans that are consistent with the overall strategic positioning of the property.
  • Delegation, negotiation, and diplomacy skills are required.
  • Must have excellent customer service, interpersonal, and organizational skills.
  • Ability to maintain a high level of energy and take a proactive and strategic approach to dealing with issues.
  • Must have the ability to interact with guests, staff, and colleagues and resolve problems and conflicts diplomatically and tactfully.
  • Ability to work collaboratively and communicate effectively with team members at all levels of the organization.
  • Must have extensive knowledge of food cost and labor analysis. - Ability to effectively present information and respond to questions from groups of managers, clients, customers, and the general public.

SUPERVISORY RESPONSIBILITIES                    

This job has supervisory responsibilities. 

  • Responsible for developing team members and participating in development/ training programs.
  • Maximize engagement through rewards and recognition programs.
  • Provide leadership and direction that contributes to the success of the organization through engaging, developing, and mentoring team members within and outside the department. 
  • Evaluate team members within the department and deliver timely and constructive feedback to enhance performance.
  • Recommend staffing changes (including interviewing and hiring) and scheduling (planning, assigning, and monitoring work) that meet business needs.

LANGUAGE SKILLS  

Ability to read and interpret documents in English, such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to read and communicate verbally in English. 

 

REASONING ABILITY  

Ability to apply commonsense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations. 

 

CERTIFICATES, LICENSES, REGISTRATIONS 

Team members must be able to qualify for licenses and permits required by federal, state, and local regulations. 

 

Must possess a valid driver’s license and have an acceptable driving history as determined by PENN Entertainment's auto insurance carrier.
